Get the moist from your lemons – Lynne’s tip of the month
How often do you think there is still a bit more juice in the lemon you are squeezing for a recipe. Pop the whole washed lemon in the microwave for 30 – 45 secs (the bigger the lemon the longer it needs). As soon as you cut it the juices just ooze from the fruit and it is also easier on the arms and wrists.
If your recipe calls for the rind or zest of the lemon a trick I use to make the rind tender and full of flavour. These are the steps:
- Zest or grate the rind of the washed lemon into a bowl.
- Place whole lemon in the microwave and follow the instructions above
- Squeeze the juice into the bowl with the zest
- Allow zest or rind to steep in the juice – the heat from the juice will soften the zest or rind and make it more lemony and less bitter
